Easy breakfast with a difference

Breakfast doesn’t have to be boring. Fennel and red cabbage thinly sliced, a handful of dill and a few mint leaves. Rocket (from the backyard) and some sauté potatoes. Flake some smoked ocean trout into it (I get mine from Dos Juan’s at Hornsby market) All this done the night before…in the morning drizzle over a freshly squeezed lemon and olive oil and then chuck on a couple of poached eggs. Boom! Cordon Bleu breakfast in 5 mins!
